In the process of trying to use up random stuff in the fridge, I have found the tastiest lunch for my work-from-home days. And it's very quick to make!

Ingredients:
- a small handful of sliced mushrooms
- about 1/4 bell pepper (optional, diced)
- 1 or more eggs (depending on hunger)
- cheese
- small soft taco shells

Sauté the mushrooms and peppers in a very small skillet, then stir in the egg(s). While that finishes cooking, grate or slice the cheese onto 2 or 3 soft taco shells (I'm sure you could use one large burrito wrap instead if that's what you have, or a pita, or whatever). Melt the cheese by either sticking them in the microwave for thirty seconds or so, or by lightly toasting them like you would a grilled cheese sandwich. (I prefer the microwave way because it's quicker and the shells come out bendier and less prone to breakage, but if you don't like what happens to bread when you microwave it, the toasting might work better.)

Spoon the filling onto the shells; wrap; eat!

It's also infinitely adaptable to whatever you have lying around in the fridge that needs to be eaten up, assuming that it can be sautéed with an egg.
