Easy is good. I like easy.

I just thought I'd share this inst-o-lunch that a co-worker introduced me to. They're incredibly versatile, so you'd make them a little differently if you were making them for yourself versus as appetizers, snacks for kids, or such things.

She called them pinwheels. Basically, you take a tortilla, spread it thinly with cream cheese, add whatever else you want (chopped up chives or other garnishes, chopped fruit or nuts, smoked salmon, whatever) and roll it up into a tube. If you're going to take the extra step of making it look nice for presenting to other people as a bite-sized snack, then slice the tube into sections, the same way you cut up cinnamon rolls (hence the name pinwheel ... because that's what it looks like) and stick a toothpick in it. Just for eating, though, they're nice and convenient rolled into a tube. That's it; there's nothing else to it.

You can use different kinds of tortillas and different flavors of cream cheese for variety. You can even make sweet ones. I like using plain cream cheese and a couple leaves of lettuce on a wheat tortilla; it's a bit like a pita, but easier to eat.

Isn't it just? I love that you can make them with practically anything, as long as you've got tortillas. And we usually end up with a couple left over in the bottom of the package every time we make burritos, so it's a great way to use them up.
