Easy is good. I like easy.

I just thought I'd share this inst-o-lunch that a co-worker introduced me to. They're incredibly versatile, so you'd make them a little differently if you were making them for yourself versus as appetizers, snacks for kids, or such things.

She called them pinwheels. Basically, you take a tortilla, spread it thinly with cream cheese, add whatever else you want (chopped up chives or other garnishes, chopped fruit or nuts, smoked salmon, whatever) and roll it up into a tube. If you're going to take the extra step of making it look nice for presenting to other people as a bite-sized snack, then slice the tube into sections, the same way you cut up cinnamon rolls (hence the name pinwheel ... because that's what it looks like) and stick a toothpick in it. Just for eating, though, they're nice and convenient rolled into a tube. That's it; there's nothing else to it.

You can use different kinds of tortillas and different flavors of cream cheese for variety. You can even make sweet ones. I like using plain cream cheese and a couple leaves of lettuce on a wheat tortilla; it's a bit like a pita, but easier to eat.

Isn't it just? I love that you can make them with practically anything, as long as you've got tortillas. And we usually end up with a couple left over in the bottom of the package every time we make burritos, so it's a great way to use them up.

I don't actually eat cream cheese all that much -- not that I have anything against it, but just because there are other things that I like better on bread-type foods (I have a huge weakness for a toasted, buttered bagel ... mmmm). But it's wonderfully effective for sticking things together.

I like to make those. Try adding some dry Ranch Salad Dressing to a few ounces of cream cheese...gives it a little zest that's hard to resist. During the summer, I'll slice tomatoes, olives, lettuce, add sliced ham or turkey, cheese, fresh basil...and make it a meal in itself. They are so easy to do and taste great.

I haven't made any in a while. Might have to now. (GG)

Ooh, excellent suggestion! I'll have to try that. (I do often eat leftover pancakes rolled up with jelly ... I suppose that's a crepe, sort of.)

tortillas are great for everything. I loved potato, egg and cheese.

It's SO easy! I am very fond of easy. And you can do it with almost anything you have lying around (well, anything you can put on bread, anyway). I've been using it kind of like a super-easy pita -- I've always liked pitas, but they're kind of difficult to eat.

Ooh, excellent suggestion! I've been doing vaguely similar things, but I never tried it with the ranch.

They're sort of like a pita but easier to eat! I always liked pitas but I usually end up spilling the contents all over the place.
