My requested tags are the ones that looked like the most fun to me for each of these fandoms, but I give blanket permission to treat me with absolutely anything in the freeform tagset.
Likes: hurt/comfort, character studies, people gradually becoming friends, prickly friendships, loyalty, banter, sarcasm, slice of life, outside POV, tropey tropes (e.g. soulmates, sex pollen), badass normals dealing with weird stuff, casual intimacy, characters being all up in each other's space, found families, love languages, lonely people learning to be loved. I'm not sure how much of that actually applies due to the nature of this exchange, but if you end up, for example, telling a story through letters or writing a framing story for a set of clippings/articles, these are some of the things I enjoy.

So here I'm thinking shenanigans & hijinks as reported via any/some/all of the above methods. The first thing that comes to mind is Ward & Danny on their road trip, with Colleen and/or Misty getting increasingly WTF back home as they follow along via news stories/letters/whatever, but really anything you want to do with these characters and these fanwork types would be delightful. Danny's police file from when he was on the run? Newspaper articles on all the changes at Rand over the last couple of years? (I mean, good god, first the supposedly dead son of the deceased previous CEO shows up, then he goes on the run on drug charges, and while all this is going on, the company's OTHER supposedly dead CEO arrives on the scene and takes a header off the roof a day later, after being shot multiple times by his son. Rand's PR department must have been kept busy on this one, I gotta say.) Colleen and Misty getting a ransom note for two expat billionaires overseas? Claire reacting to various newspaper articles keeping her updated on the events of the other shows?

Are any of these people likely to keep a diary? Do I care? No, I do not. Ward's personal journal chronicling the Harold years might be both tragic and hilarious in a Very Secret Diaries kind of way, or Claire's personal diary in which she lets out all her annoyance and angst over the self-destructive idiots she spends all day around.

I'd love any ridiculous outside theories about the weirdness in Hawkins. The internet ones are obviously modern-day, but I'd prefer if the Stranger Things series events still took place in the 80s; this could either be a retrospective look back (the unsolved mystery of the 1985 Hawkins mall fire!) or some brand-new weird thing happening in the modern day. Commentary from the grown-up canon characters would be hilarious (in the form of Reddit comments or wiki edits?). Of course, you can also do anything to do with conspiracy theories back in the canon era, or found footage/documents or whatever is fun for you!

I picked these tags for various outside viewpoints on the general weirdness of Hawkins. It would be fascinating and hilarious to see how ordinary people rationalize what's going on around them. For the "episode recap" one, I was thinking something like a documentary on Hawkins or the like, maybe a show that gets things hilariously wrong.

Any of these would be incredibly fun for this show, if you have the time and inclination to create something like this! For the D&D one specifically, I play tabletop RPGs, including D&D, and a custom Stranger Things module would be AMAZING. (If you're familiar with other game systems, I also really like the Palladium rules and used to play their horror/urban fantasy game Beyond the Supernatural a lot, and a Stranger Things module would fit beautifully within that world.) But in general, any type of craft project would be loved and adored, and a Choose Your Own Adventure would be incredible.
